In China they carve watermelons instead of pumpkins.
I think you'll have to agree... this is some pretty fancy artwork!

UPDATE!

I received an e-mail from an "Eric Fong" who informed me that the carvings are actually Japanese, and that the writing on the melons is Japanese.

NOTE:  There are 34 photos total.  Due to bandwidth restrictions, they must load one by one.
The week of January 23-30 the number of "hits" on the melon page took out my web host!

This should be little more than an inconvenience.  In time, I'll put on a navigation link.
